Lemon Rice recipe /Lunch Box recipe

Lemon rice is one of the most famous south Indian variety rice recipe .It takes all around just 10 min to cook that’s why it is a easy and quick lunch box recipe. It is a dish with white rice and fresh lemon juice. Which is very simple but tastes really nice. You can have any veggies or chutneys or pickles as side dish. But my all time favorite is potato fry. I have shown you with step by step picture recipe . Now lets look into the recipe

Ingredients:

  • White rice(you can also use leftover rice)
  • Lemon
  • Mustard seeds
  • Urud dal
  • Channa Dal
  • Cashew nut(or peanut)
  • Green and red chilli
  • Ginger
  • Curry leaves
  • Coriander leaves
  • Turmeric powder
  • Asafoetida
  • Salt

Instructions:

  1. Heat oil in pan and add mustard seeds,1/2 tsp of urud dal and 1/2 tsp of channa dal
  2. Add finely chopped ginger and add 2 red chillies and 1 green chilli
  3. Add some curry leaves and 6-7 cashew nuts(you can also have peanuts)
  4. Add a pinch of turmeric powder and pinch of Asafoetida 
  5. Turn the stove top off and add the lemon juice(half lemon for one cup of rice)
  6. Add the cooked rice and give a nice mix (add salt and extra lemon juice to your flavor)
  7. Your lemon rice is ready garnish with coriander leaves
